Texas hail claims - appraisal clause question

Having a dispute with my insurer over hail damage amount. Contractor says $35k, insurance says $18k. Heard Texas has an appraisal process but not sure how it works.

Has anyone used the appraisal clause in Texas? Is it worth it? How much does it cost and how long does it take?
